Subtitles are usually safer for training: staff can read along, and a wrong word is obvious rather than hidden in a voice.

Can I correct the terms first?

Yes, and it matters most here. Fix the safety terms and system names in the source transcript, and the translation is made from your wording rather than a guess.

Do I get the original text too?

Yes. The transcript in the language that was spoken is kept and downloadable, which is what most training records actually need.
